Something To Do in January 02/03/2012
I was home this week with three toddlers and looking for something to do... Granola Bars 3 eggs 3/4 cup brown sugar 2T canola oil 2t cinnamon 1/2 t salt 2 t vanilla 3 cups toasted oats (some rolled and some quick, mixing the two makes a great texture and helps the bars stick together) 1 cup dried cranberries 1/2 cup toasted wheat germ 1/2 cup toasted sunflower seeds 1/2 cup chopped and toasted almonds. 2 T flour Preheat oven to 325 F. Lightly toast oats, almonds and seeds (seperately) on the stovetop in a cast-iron pan (or in the oven at 350 F...careful it's easy to burn them). Line a cookie tray with foil and lightly coat with oil. Whisk eggs, sugar, oil, cinnamon, salt and vanilla together. Stir in oats, cranberries, almonds, seeds and flour. Spread on cookie sheet press down firmly. Bake for 30-35 minutes, or until golden brown. Slide the tinfoil and bars off the cookies sheet and use an oiled knife to cut while they're still warm.
